Bone-in New York Steak

Steak over sauce for Winter 2015 steak menu

Prep Items: 

16 oz bone in New York Strip

salt and pepper

1 tsp clarified butter

1/2 tsp shallots

1/2 garlic

1/4 cup shitake mushrooms (sliced)

1/2 cup port wine

1 cup demi glace, knorr recipe

1 baked potato

2 oz butter (for potato)

2 oz sour cream (for potato)

Prep Instructions: 

Season NewYork Strip 

cook to desired doneness

place strip on oval platter with bone pointing to one end of the platter

pre-heat a saute pan (high heat) and add butter

Add mushrooms ro pan, cook for 2-3 min until mushrroms are brown

add shallot and garlic (cook for 1min)

deglaze with port wine and reduce for 2 min

add Demi Glace and bring to a simmer

pour suace on bottom half of steak

serve with potato, choice of side and steak knife
